Preheat your oven to 180C/350F and place a water-filled pan in the bottom rack of the oven. The pork will be roasted above that rack.

Make some horizontal slits on the sides of the pork belly after cleaning and drying it. Then thoroughly rub the Chinese five-spice powder and put garlic deeper in the slits.

Make an even layer of salt all over the pork belly. And roast it for one hour until the salt forms a crust. Add water if needed.

Reserve some sauce and use the rest to marinate the pork and keep it in the refrigerator for at least eight hours or overnight if you have time.

Preheat the oven to 475F and place it on a rack in the upper third portion of the oven. Check the temperature often as it will vary and after ten minutes roast it at 375F. Keep a pan of water under to prevent the pork from burning.

Roast it for twenty minutes and baste it with the sauce then flip it and roast it again for another 15 minutes at 180 degrees.

After cooling it for ten minutes outside the oven, baste it with leftover sauce and enjoy your char siu.

Honey Glazed Chinese Roast Pork

To make the marinade, you have to prepare a sauce with honey, sherry, garlic, ginger, and soy sauce. Pierce the meaty part of the pork and place them together in a plastic bag for eight hours in the refrigerator.

Preheat the oven to 325F and preserve the sauce after putting the pork in a nine by thirteen inches baking dish. Roast it for one hour and then roast it again after loosely covering it with foil at 145F for one and a half hours.

Bring it out of the oven to cool it for 15 minutes. Use the marinade and pan dripping with some cornstarch and water and boil it to make a dipping.
