One Chinese eggplant

150grams of pork (minced)

Half diced red chili

Two thinly sliced green chilies

Half tablespoon of chopped garlic

Two tablespoons of olive oil

One-third cup of water

For Seasonings

One tablespoon of light soy sauce

Half tablespoon of dark soy sauce

One teaspoon of sugar

A one-fourth teaspoon of sesame oil

White pepper (grounded)

For Thickening

Two tablespoons of cornstarch mixed with three tablespoons of water.

Steamed Eggplant With Pork: Step By Step Instructions

Step One

Firstly, pour some water in a large saucepan and heat it on high flames, until it starts to boil. Next, cut the eggplant into two halves and slice them as per its length. Then take the eggplant and place it on a steamer. Make sure that the skin faces down for about eight minutes. Once it cools, remove it from the pan and place it in a colander.

Step Two

Next, heat the pan and add two tablespoons of olive oil. Add chili and garlic and toss it for the flavors. Then add the minced pork and stir it. Also, break it in pieces while stirring. Finally, add the seasoning preparation with some water. Simmer the dish for about fifteen minutes on low heat.

Step Three

Now, while cooking the pork under low heat, chop the eggplants into small chunks. Make sure each chunk is around 4cms in size. After you are done with the minced pork, add the mixture of cornstarch with water which you already prepared for thickening and glaze.

Step Four

Turn on the heat and cook on high flames until it starts boiling. Finally, turn down the heat and add the chopped green onions.

Now, you can serve the Chinese eggplants and spread the meat sauce over the dish.
