How To Make Xiao Long Bao

Xiao long bao is a Chinese dish. The name translates to “Shanghai Steamed Soup Dumplings.” It is a popular dish. However, its preparation time takes relatively long. The filling of Xiao long bao consists of a gelatinized form of broth. The jelly broth inside is made of pork, chicken, and cured ham. The logic behind filling the dumpling with gelatinized broth is that when you steam the dumplings, the broth melts, making it a literal “Soup Dumpling.” Preparing xiao long bao requires various steps. We first make the soup gelatin, then the filling. After these two, make the dough to wrap the dumpling in and, lastly, the dipping sauce.

Step 1 Of Preparing Xiao Long Bao: The Soup Gelatin

  • two quarts water
  • 2 pounds of chicken bones
  • 2 ounces of cured ham
  • Half a pound of pork belly
  • A piece of ginger, sliced
  • Two stalks of green onion, divided into 3
  • Two smashed garlic cloves
  • Two teaspoons of Chinese rice wine
  • One tablespoon unflavoured gelatin

Preparing The Soup Gelatin For Xiao Long Bao:

  • Place all of the ingredients, except for the gelatin in a large pot and let it boil and simmer for around 45 minutes. If necessary, add some salt after tasting (not always required as cured ham is salty)
  • Take 4 cups of broth and add it to a saucepan and turn up the heat. Then, turn the heat off and add in the gelatin. There should be no powder left as you mix it, and once this is attained, pour the mix into a baking tin and refrigerate for a few hours.
  • Once its set, slice into boxes, suitable to the size that you’d like your dumplings to be.

Step 2 Of Preparing Xiao Long Bao: The Filling

Ingredients required:

  • 1-pound ground pork
  • A quarter-pound of shrimp, minced
  • Three stalks of green onion
  • Two tablespoons of sugar
  • Two tablespoons of soy sauce
  • A tablespoon of kosher salt
  • Quarter teaspoon white pepper
  • Half a teaspoon ground ginger
  • One teaspoon Chinese rice wine
  • Half a teaspoon sesame oil

Preparing the filling for xiao long bao:

There is a straightforward step here. Mix the ingredients in a bowl and stir in about a cup and a half of the soup gelatin. Mix well. Then refrigerate.

Step 3 Of Preparing Xiao Long Bao: Creating The Dumpling

First, we must knead the dough for the xiao long bao soup dumpling, then add in the filling and steam it.

Ingredients required to make the dough:

  • 400 grams of flour
  • Three-quarters cups of boiling water
  • A quarter cup of cold water
  • A tablespoon of cooking oil

Finally preparing the xiao long bao:

  • Add the most of the flour to a large bowl and pour in a third of the mentioned required hot water. Stir strongly to combine, adding more flour and hot water to the mix. Once the hot water is over, proceed to add dollops of the cold water to the mix, and stir until it cannot be stirred anymore.
  • Now, knead the dough with your hand for about ten minutes, then allow it to sit covered in plastic wrap for around an hour.
  • After this, roll balls out of the dough and flatten them out. Fill each circular piece of dough with about one teaspoon of filling, then pinch and twist it to make it the shape of a dumpling.
  • Steam the dumplings in cabbage leaves. Voila! Your xiao long bao is ready. However, you still need a dipping sauce with which to eat it.

Step 4 (After Preparing Xiao Long Boa: The Dipping Sauce

  • A tablespoon of sambal hot chili & garlic sauce
  • Quarter cup black vinegar
  • Quarter cup soy cause
  • A teaspoon of sesame oil
  • A fresh piece of ginger, peeled

Preparing the dipping sauce for Xiao Long Bao:

  • Shave the ginger or cut thin strips of it. The slices need to be ultra-thin, to ensure a crispy addition to your sauce along with a tasty ginger flavor.

Put all the ingredients together in a bowl with the sliced ginger. Serve and eat with the Xiao Long Bao soup dumplings.
