Hainanese Chicken Rice

The southern part of China, Hainan is famous for the chicken recipe of Hainanese Chicken Rice. It is also popular in Singapore, Malaysia, Thailand, and Vietnam. In 2011, it was placed in the list of 50 most popular recipes. Fantastic fragrance and treasure of protein and fats make it a very versatile dish.

Ingredients: Hainanese Chicken Rice

1.6kg whole free-range chicken, fat trimmed

15 dried Chinese red dates

Add 2 tablespoons of salt

For the Ginger and Spring Onion Sauce:

5 tablespoons of virgin olive oil

200g fresh ginger, peeled and thinly sliced

6 spring onions sliced into 4cm to 5cm lengthwise

3 garlic cloves peeled

1 teaspoon salt

3 sticks/teaspoons Natvia or raw brown sugar

1 lime, juiced

For the Chilli Sauce: Hainanese Chicken Rice

2 tablespoons of extra virgin olive oil

5 long fresh red chilies, deseeded and cut into 3cm lengthwise

3 small sweet red chilies, deseeded (optional)

3 garlic cloves peeled

1 small brown onion, peeled and cut into wedges

1 teaspoon salt

2 teaspoons sugar

1 lemon, juiced

For the Fragrant Rice: Hainanese Chicken Rice

2 cups basmati rice

3 tablespoons extra virgin olive oil

2 pandan leaves, each tied in a knot (fresh preferred or frozen)

5 cm ginger, peeled, thickly sliced and bruised

Chicken broth from cooking the chicken

For the Garnish:

3 sprigs of coriander including stems, roughly tear into 1 to 2 cm lengthwise

3 Lebanese cucumber, peeled and thinly sliced lengthwise

For the Dressing:

2 tablespoons gluten-free pure sesame oil

1 tablespoon gluten-free light soy sauce

Instructions: Hainanese Chicken Rice

Process To Prepare The Chilli Sauce:

Add red chillies, extra virgin olive oil, onion and garlic in the jar of the food processor. Blend them until they turn into a smooth paste. Take a small bowl and remove all the sooth paste from the pot and out into the bowl. Now, add lemon juice, sugar, and salt. Mix well. Keep the container aside and clean the processor.  

Process To Prepare Spring Onion and And Ginger Sauce

Take the jar of the food processor and add spring onion, ginger, and garlic into it. Grind them and make a rough paste. You can take away two tablespoons of the adhesive for marinating the chicken. Take a heat resistant bowl and add the paste into it. Now, heat the extra virgin olive oil of 5 tbsp. Heat the oil for a few seconds and add the prepared paste into it. Then add salt, lemon juice, and salt.

Process To Cook, The Chicken:

Wash and clean the chicken. Wash it so that the extra fat can be removed from the cavity bottom and under the skin. Now take 2 tbsp ginger, 2 tbsp salt, and 2 tbsp of onion sauce and clean the chicken’s skin. 

Take a pot. Fill it half with the water. Heat the vessel until the water starts boiling. As the water began cooking, add chicken and all Chinese dates (red). Cover with lead. Let the gas remain on sim for 30 minutes. Turn off the flame. Take out chicken and place it on a plate. 

You can use the chicken broth as a soup at the time of serving and take out the dates from it. 

Prepare Fragrant Rice:

In an electric cooker, add pandan leaves, extra virgin olive oil, and ginger along with rice. Add water as per the cooker’s manual and amount of the rice. Cook the rice.

Serve The Chicken: Hainanese Chicken Rice

Take chicken, cut it into four pieces. Remove the meat from chicken’s bones carefully. Now, cut boneless chicken into bite-sized pieces. Garnish pieces with coriander. 

Serve the chicken with chilli sauce, fragrant rice, ginger sauce, chicken broth, and cucumber. Use coriander for garnishing.
