Asian Meal knowledge is more though am Chinese, and I grew up in a small village in South China. From my childhood memory, my mom cooks Asian meals using all-natural and fresh ingredients, such as all kinds of veggies we picked up right from our gardens. So, I would say, not all east and southeast Asian food are there in the making out of fresh ingredients, especially the ones in the US (Americanized Asian food). Still, compared to some canned food or manufacturing process, Asian food, in general, requires relatively fresh or organic ingredients.
Most Chinese people I grew up with go grocery shopping once a day (I know, crazy, right?), especially to the fresh meat market. My mom still goes to buy fresh veggies every morning, and she would pick out which live chicken, or fish for our meals herself (the store owners let you do so). Compared to all processed meat in grocery stores here, my mom’s old-fashioned way gets us fresh meat (but it’s a lot of work later on.)

Speaking of workload, I think an important factor of what makes Asian food/cuisine cooking so good is that people take a lot of time in the preparation/cooking process. A lot of food is out of scratch.
Also, we add so many spices into our dishes. A simple comparison would be the most popular and straightforward seasonings in western cooking is probably salt and black pepper (we call them Hu Jiao 胡椒), while in Chinese cuisine specifically, the basic condiments would involve at least 5 or 6 items.
