Steps For Cuttings Chicken Chinese- Style

First of all, start by deboning the chicken from the breast and thighs. This makes the cutting process more convenient. The detailed method of cutting the chicken in Chinese style is discussed below: 

  • Let the chicken lay on your chopping board on its breast by facing upwards. Cut the chicken into equal two halves. As you reach the spine, apply more pressure, or use a cleaver or scissors. The spine being a good part of the chicken is difficult to cut. 
  • As you separate the chicken into two halves, use one half at a time to chop. Take one half on the chopping board, and by using your fingers, try to find the joint. The joint here refers to the one that is located in between the thigh and drumstick. Cut off the drumstick and arrange it on a plate. 
  • Refer to the recipe for cutting the chicken for, as that will determine the shape of the pieces. There are chances of the thighs coming apart in case you are cutting a cooked chicken. In such a situation, tear them off by using your fingers and then cut into desired sizes with a knife.
  • By using your fingers, try to find out the joint that is present between the breast and the wing. Cut off the wing and arrange them on a plate.

Extra Precautions

  • Now use your fingers again under the side of the breast and tear off the meat from the breast bone. If your recipe instructs not to debone the breast, you may skip this step. 
  • By using a knife, start slicing the breast into small pieces and organize them on the plate. 
  • Once you are done with the breast, now it is time to deal with the thigh. Use your fingers to tear off the meat from the thigh bone. It is a messy task to separate the meat from the thigh bone. So, don’t get disheartened if the pieces break unevenly. If you wish, you may skip this step too. In most recipes, the thighs are kept intact. Therefore, you may act according to the need of your dish. 
  • After having done with one piece of the chicken, you may proceed to the second half. Follow the same steps to cut or tear it into pieces of your choice.
