To begin, wash a few green beans thoroughly and trim the top and bottom of the beans. This ensures a smooth feel when it is cooked.

Chop the beans diagonally into pieces approximately two inches long. This size can guarantee a crunchiness, neither too big nor too small!

Chop a few buds of garlic that equals one tablespoon, and likewise, chop a little bit of ginger that equals about two teaspoons.

Take two strands of spring onions and chop the white part and keep it aside.

Keep a small amount of chili paste, soya sauce, salt, and pepper for the final garnishing.

How to make Chinese green beans?

The first step is to heat one tablespoon of white oil in a frying pan. Let it heat for about a minute.

Add the pieces of green beans until they start drying up or wrinkle. Stir-fry the beans for about six to seven minutes until the pieces of beans start turning brown.

After the beans turn brown, empty them on a plate and let the beans drain the oil out. We can use paper towels to soak the oil out of the beans.

Now, heat one tablespoon of white oil in the frying pan on a high flame. 

After the oil is heated enough, add the chopped garlic, ginger, and the spring onion whites. Stir fry for about half a minute.

Add half a teaspoon of chili paste and stir fry for a few more seconds until it is aromatic.

Lastly, add the beans to this mixture. Stir for about 30 seconds, add one and a half teaspoon of soya sauce, and mix well.

For the final touch, add salt to taste. You can also use a little pepper to give it a spicy touch.

Stir and mix everything and serve hot.
