Ingredients

Japanese Roll Cake
  • Four egg yolks
  • 20 g caster/ultrafine sugar
  • 40 ml milk
  • 3 ml vanilla extract
  • 10-15 chopped strawberries
  • 40 g vegetable oil
  • 30 g all-purpose flour
  • 30 g cornstarch
  • A pinch of salt
  • Four egg whites
  • ⅜ teaspoon of cream tartar
  • 60 g caster/ultra fined sugar – sifted

Directions

  • Preheat the oven at 170°C at top and bottom heat.
  • Put the yolks and 20-grams sugar (1-½ teaspoons) in a bowl, gently beat them until the sugar gets dissolved with the yolks.
  • Add oil, milk, vanilla, chopped strawberries and mix them well with sugar and yolk.
  • Now, sift flour and cornstarch into the mixture, stir them well until we have a fully incorporated and smooth mixture.
  • The next step is to whip egg whites with salt, cream of tartar, and sugar until they form a stiff peak, i.e., whipped egg whites become glossy and smooth. If you lift the beater, they form a peak that holds and stands.
  • Fold those whipped egg whites into the yolk mixture till we have a fluffy, foamy, and smooth batter without any giant air bubbles. The batter shouldn’t be too thin.
  • Pour the batter into the pan. Bake the batter in the oven at 170° C for 25-30 minutes, until the cake gets dark golden. If you slightly put your finger into the cake, it should spring back in shape.
  • Now, take the cake out of the pan and remove the parchment paper. Let it cool down on a rack.
